Golden Milk Turmeric Latte

Golden Milk is a great morning coffee ritual substitute, It has anti inflammatory properties, helps with digestion & boosts metabolism as well as helps with glowing beautiful skin!

Ingredients

  • 1 1/4 cup unsweetened Vanilla non dairy milk (almond, oat, cashew, etc).

  • 1/2 tsp Ground Turmeric.

  • 1/2 tsp Ground Ginger.

  • 1/2 tsp Ground Cinnamon.

  • Pinch of Black Pepper (this helps to absorb the curcumin in turmeric)

  • 1 tsp Maple Syrup to taste (or other liquid sweetener)

Instructions

  1. In a small pan, place on stove over medium heat, whisk all ingredients together until smooth & hot but not boiling.

  2. Enjoy!

Lunch

Chickpea Curry over Cauliflower Rice

Use Chicken Breast or Keep Vegan

  • 2 tbsp Coconut oil.

  • 1 large onion, diced.

  • 3 cloves garlic minced.

  • 1 inch ginger, peeled & minced.

  • 1 tsp Ground Cumin and Tumeric, & Garam Masala

  • 1 can of chickpeas, drained & rinsed.

  • 1 can of coconut milk.

  • 2 cups of cauliflower florets.

  • 1 small sweet potato, cut into 1/4 inch cubes

  • Salt to taste.

  • Cilantro and Plain Greek Yoghurt for garnish (Optional)

  1. Heat oil in a medium skillet, sauté onion, garlic & ginger & cook until softened. 2-3 mins

  2. Add spices, stir about a minute. Add chickpeas, coconut milk, sweet potato, & cauliflower.

  3. Bring temperature up so that mixture comes to a boil, then reduce heat to a simmer for 25mins. Stir to prevent burning. Salt to taste, serve over cauliflower rice top with cilantro & plain Greek yoghurt.

Dinner

Miso Glazed Salmon over Seasonal Roasted Vegetables

  • 2 Wild caught Salmon Fillets, skin on.

  • 3 tbsp Miso Paste.

  • 2 tbsp Lemon Juice

  • 2 tsp Mirin

  • 1 tbsp Maple Syrup

  • 2 tsp Toasted Sesame Oil

  • 2 garlic cloves, minced

  • 2 tbsp Organic Extra Virgin Olive Oil

  • Sesame Seeds & Lime Slices to Garnish

Instructions

  1. Combine Miso paste, Mirin, Maple Syrup & 1 tsp of the sesame oil in a bowl & mix well. Spoon this mixture over the salmon top side, not skin side, & let sit for 10 mins.

  2. Cook the minced garlic in the olive oil, over medium heat, until fragrant, then put salmon fillets in skin side down. Cook for 4 mins, flip then turn over & cook for 2 mins.

  3. Remove from heat, let sit, garnish with sesame seeds & lime slice.

Seasonal Roasted Vegetables

Preheat Oven to 375, use whatever vegetables are in season. Such as sweet potatoes, green beans, Brussels sprouts, carrots, broccoli i etc. Pop parchment paper over baking tray, put the vegetable in the tray, toss with olive oil, fresh thyme & pop in the over for about 20mins.
